The origin of Vegetable Jhalfurezi can be traced back to the rich tapestry of Bengali cuisine. The term “Jhalfiorezi” is derived from the Bengali words “Jhal,” meaning spicy; and “Farezi, ” meaning suitable for a meal. It is believed that the servants during the British Raj were made to prepare this dish from the leftover good and usable vegetables instead of throwing them.
